Cream of Cherry Soup

1 1/4 cups white Riesling wine

1 3/4 cups water

1/2 tsp green stevia

1 cinnamon stick

1 organic lemon, half grated zest and juice of whole lemon

2 cups frozen pitted organic cherries

1 1/4 cups of organic plain greek yogurt

garnish with ground cinnamon

Pour wine and water into saucepan, add the stevia, cinnamon stick, and lemon zest and juice. Bring to boil and simmer for 5 minutes.

Add the still frozen cherries and simmer for 5 minutes. Discard the cinnamon stick, then ladle half the liquid and cherries into a blender or food processor. and add the greek yogurt  blend until smooth. Return the blended liquid to the saucepan and mix well.

Chill the soup thoroughly, then ladle into shallow bowls so that the whole cherries can be seen and sprinkle with a little ground cinnamon to garnish.

Great dish to make ahead and freeze or keeps well in the refrigerator for a few days. Makes approx. 6 servings
